Ingredients

  • All Purpose Flour: 1.5 cups
  • Granulated Sugar: 0.5 cups
  • Baking Powder: 1.5 teaspoons
  • Salt: 0.25 teaspoons
  • Ground Cinnamon: 1 teaspoon
  • Vegetable Oil: 0.33 cups
  • Large Egg: 1 unit
  • Milk: 0.5 cups
  • Melted Butter: 0.25 cups (for topping)
  • Additional Sugar: 0.25 cups (for topping)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit and grease a 12-cup muffin tin or line with paper liners.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and one teaspoon of cinnamon.
  3. In a separate smaller bowl, whisk together the vegetable oil, egg, and milk until the mixture is uniform.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined, ensuring you do not over-mix.
  5. Fill the muffin cups about two-thirds full with the batter.
  6. Bake for 15 to 20 minutes or until a toothpick inserted into the center comes out clean.
  7. While the muffins cool slightly, melt the butter in one small bowl and mix the remaining sugar and cinnamon in another.
  8. Dip the top of each warm muffin first into the melted butter and then into the cinnamon-sugar mixture.

Notes

  • Don’t Over-mix: Stir the batter only until the flour disappears to ensure a light and tender crumb.
  • Dip While Warm: For the best coating, dip the muffins while they are still warm so the butter and sugar adhere perfectly.
  • Room Temp Ingredients: Using a room temperature egg and milk helps the batter emulsify more smoothly for an even rise.
