Fluffy long-grain rice brightened with fresh lime juice and zest, tossed with a generous handful of cilantro for a zesty, aromatic side that lifts any meal.

  • 1 cup (185 g) long-grain white rice, rinsed
  • 2 cups (480 ml) water or vegetable broth
  • 1 tablespoon olive oil or unsalted butter
  • 1 teaspoon fine sea salt
  • 2 tablespoons freshly squeezed lime juice
  • 1 teaspoon finely grated lime zest
  • 1/2 cup fresh cilantro, finely chopped

Instructions

  1. Rinse the rice in a fine mesh strainer under cold water until the water runs clear.
  2. In a medium saucepan, combine water or broth, rinsed rice, olive oil or butter, and salt. Bring to a boil over medium-high heat.
  3. Reduce heat to low, cover with a tight-fitting lid, and simmer for 18 to 20 minutes until the liquid is absorbed and the rice is tender.
  4. Remove from heat and let the pot stand, covered, for 5 minutes to steam.
  5. Fluff the rice gently with a fork, then fold in lime zest, lime juice, and chopped cilantro.
  6. Taste and adjust seasoning with a pinch more salt or a squeeze of lime if desired. Serve warm.

  • For subtle depth, add 1 small minced garlic clove to the pot as it comes to a boil.
  • Stir in cilantro and lime after cooking to keep flavors bright and the herbs vibrant.
  • Swap in jasmine rice for extra fragrance, adjusting cook time as needed.
