A rich, moist, and spice-infused Christmas cake packed with dried fruits and walnuts, perfect as a holiday centerpiece.

Ingredients

  • 225g Unsalted Butter
  • 200g Brown Sugar
  • 4 Large Eggs
  • 250g All Purpose Flour
  • 2 tsp Ground Cinnamon
  • 1 tsp Ground Ginger
  • 500g Mixed Dried Fruit (raisins, currants, sultanas)
  • 100g Chopped Walnuts
  • 1 tbsp Orange Zest
  • 120ml Apple Juice

Instructions

  1. Preheat oven to 300°F (150°C) and line an 8-inch round pan with double parchment paper.
  2. Soak dried fruits in apple juice for at least 1 hour.
  3. Cream butter and brown sugar until light and fluffy.
  4. Beat in eggs one at a time.
  5. Fold in flour, cinnamon, ginger, orange zest, and chopped walnuts.
  6. Stir in the soaked fruit and any remaining juice.
  7. Pour into pan and bake for 2 hours or until a skewer comes out clean.
  8. Cool in pan for 20 minutes, then move to a wire rack to cool completely.

Notes

  • Soak fruit in warm juice to speed up the process.
  • Double-line the pan to prevent the edges from drying out during the long bake.
  • Make the cake 2 days in advance for better flavor development.
