  • 0.5 cup Unsweetened Cocoa Powder
  • 1 cup Granulated Sugar
  • 1 tbsp Baking Powder
  • 0.5 tsp Salt
  • 2 units Large Eggs
  • 0.75 cup Whole Milk
  • 0.5 cup Vegetable Oil
  • 2 tbsp Fresh Orange Zest
  • 0.25 cup Fresh Orange Juice
  • 1 cup Dark Chocolate Chips
  • 1 tsp Vanilla Extract

Instructions

  1. Preheat oven to 425°F (218°C) and line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, and salt.
  3. In a separate bowl, whisk together the eggs, milk, vegetable oil, orange zest, orange juice, and vanilla extract.
  4. Gently fold the wet ingredients into the dry ingredients until just combined; do not overmix.
  5. Stir in the dark chocolate chips.
  6. Divide the batter evenly among the muffin cups, filling them to the top.
  7. Bake at 425°F for 5 minutes, then reduce the oven temperature to 375°F (190°C) and bake for an additional 12-15 minutes.
  8. Cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • The high initial temperature helps create the tall muffin domes.
  • Use room temperature eggs and milk for a smoother batter.
  • Zest the orange before juicing it for easier preparation.
