Smoky, juicy, and full of flavor, this chipotle chicken recipe is perfect for tacos, bowls, or salads. With a simple marinade and quick cook time, it’s a go-to favorite for weeknights or meal prep.

  • 2 boneless skinless chicken breasts
  • 2 chipotle peppers in adobo sauce
  • 1 tbsp adobo sauce
  • 2 tbsp fresh lime juice
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp honey
  • 2 tbsp chopped cilantro (for garnish)
  • 1/4 cup sour cream (optional for serving)

Instructions

  1. Heat a cast iron skillet or grill pan over medium-high heat.
  2. In a blender, combine chipotle peppers, adobo sauce, lime juice, olive oil, garlic, cumin, smoked paprika, oregano, salt, black pepper, and honey. Blend until smooth.
  3. Lightly oil your skillet or grill pan.
  4. Place chicken breasts in a bowl or zip-top bag, pour marinade over them, and coat well. Let sit for at least 30 minutes.
  5. Place marinated chicken into the hot skillet. Cook for 6 to 7 minutes per side or until cooked through with a slight char.
  6. Let the chicken rest 5 minutes, then slice into strips. Sprinkle with chopped cilantro.
  7. Serve over rice, in tacos, or however you prefer. Add sour cream if desired.

Notes

  • Marinate overnight for deeper flavor.
  • Use a cast iron pan for better char.
  • Serve with avocado, grilled corn, or lime wedges.
