Tender sliced chicken stir fried with broccoli, bell peppers, onions, and cherry tomatoes in a glossy ginger soy sauce, served over fluffy white rice for a quick and satisfying meal.

  • 600 grams chicken breast, thinly sliced
  • 2 tablespoons vegetable oil
  • 2 cups broccoli florets
  • 1 large red bell pepper, sliced
  • 1 medium yellow onion, sliced
  • 1 cup cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 4 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 tablespoon sesame seeds
  • 2 stalks green onions, sliced
  • 3 cups cooked white rice
  • 1/2 teaspoon black pepper

Instructions

  1. Heat a large skillet or wok over medium high heat.
  2. In a small bowl, mix soy sauce, honey, rice vinegar, sesame oil, and black pepper.
  3. Add vegetable oil to the hot skillet.
  4. Add chicken and cook until lightly browned, then remove and set aside.
  5. Add broccoli, bell pepper, onion, garlic, and ginger to the skillet and stir fry until tender crisp.
  6. Return chicken to the pan.
  7. Pour in the prepared sauce and toss until everything is evenly coated and glossy.
  8. Sprinkle with sesame seeds and green onions.
  9. Remove from heat.
  10. Serve hot over cooked white rice.

Notes

  • Cook chicken in batches to avoid steaming.
  • Prep all ingredients before heating the pan.
  • Add a splash of water if sauce becomes too thick.
  • Use gluten free soy sauce if needed.
