Chicken Picante is a bold, one-skillet dish featuring seared chicken simmered in a zesty tomato and chili sauce. This easy dinner recipe is spicy, saucy, and packed with vibrant flavor—perfect for serving over rice, pasta, or potatoes for a hearty, satisfying meal.

Ingredients

  • 4 boneless skinless chicken breasts
  • Salt and black pepper, to taste
  • 12 tbsp olive oil
  • 1 medium onion, thinly sliced
  • 3 cloves garlic, minced
  • 12 fresh chilis (or ½ tsp red chili flakes)
  • 1 (14 oz) can diced tomatoes
  • 1 tbsp tomato paste (optional)
  • ½ cup chicken broth
  • 1 tsp smoked paprika (optional)
  • Fresh cilantro or parsley, for garnish

Instructions

  1. Season chicken with salt, pepper, and smoked paprika if using.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken 3–4 minutes per side until golden, then remove and set aside.
  3. In the same skillet, sauté onion until soft, about 3 minutes. Add garlic and chilis, cook 1 minute more.
  4. Stir in diced tomatoes, tomato paste, and chicken broth. Scrape the pan and bring to a simmer.
  5. Return chicken to the pan. Spoon sauce over, cover, and simmer 8–10 minutes until chicken is cooked through and sauce thickens.
  6. Adjust seasoning and garnish with fresh herbs. Serve hot.

Notes

  • Use thighs instead of breasts for juicier meat.
  • Reduce or omit chilis for a milder version.
  • Great with rice, mashed potatoes, or crusty bread.
