Juicy spiced chicken strips sautéed with colorful bell peppers and red onions, finished with fresh lime and cilantro, and served with warm tortillas and avocado.

Ingredients

  • 700 grams chicken breast, sliced into strips
  • 3 tablespoons olive oil
  • 1 large red bell pepper, sliced
  • 1 large yellow bell pepper, sliced
  • 1 large green bell pepper, sliced
  • 1 medium red onion, sliced
  • 3 cloves garlic, minced
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons lime juice
  • 2 tablespoons fresh cilantro, chopped
  • 8 medium flour tortillas
  • 1 large avocado, sliced

Instructions

  1. Heat a large skillet over medium high heat.
  2. In a bowl, mix olive oil, chili powder, cumin, paprika, salt, and black pepper.
  3. Toss chicken strips in the spice mixture until evenly coated.
  4. Add a small drizzle of oil to the hot skillet.
  5. Cook chicken in batches until golden and fully cooked, then remove and set aside.
  6. In the same skillet, add bell peppers, onion, and garlic and sauté until tender crisp.
  7. Return chicken to the skillet and toss with the vegetables.
  8. Drizzle with lime juice and sprinkle with chopped cilantro.
  9. Warm tortillas in a dry pan or microwave.
  10. Serve chicken mixture with tortillas and sliced avocado.

Notes

  • Do not overcrowd the pan to ensure proper browning.
  • Warm tortillas before serving for best texture.
  • Add extra lime juice for more brightness.
  • Store leftovers in an airtight container.
