Tender chicken, sautéed onions and peppers, and melted provolone cheese packed into crusty hoagie rolls—these Chicken Cheesesteaks are quick, satisfying, and full of flavor.

Ingredients

  • 1 lb boneless skinless chicken breast or thighs, thinly sliced
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 large yellow onion, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 1 teaspoon Italian seasoning or dried oregano
  • 6 slices provolone cheese
  • 4 hoagie rolls or sub rolls, sliced

Instructions

  1. Preheat oven to 375°F (190°C) if toasting rolls.
  2. In a large skillet, heat olive oil over medium-high heat. Add onions and peppers and cook for 5–7 minutes until soft and golden. Remove and set aside.
  3. Season sliced chicken with salt, pepper, and Italian seasoning. In the same skillet, cook chicken until golden and fully cooked, about 5–6 minutes. Add garlic and cook 1 more minute.
  4. Return sautéed veggies to the skillet and toss with the chicken. Lay provolone slices over the top and cover the pan to melt the cheese, 1–2 minutes.
  5. Toast hoagie rolls in the oven for 3–5 minutes if desired.
  6. Fill each roll with the cheesy chicken and veggie mixture. Serve warm.

Notes

  • Thinly slice chicken and veggies for quick, even cooking.
  • Use parchment paper when toasting rolls to keep bottoms crisp.
  • Customize with mushrooms, jalapeños, or your favorite cheese.
