Cheesecake Stuffed Strawberries

Fresh, juicy strawberries hollowed out and filled with a silky, sweet cheesecake mousse and topped with crunchy graham cracker crumbs.

Ingredients

  • 1 pound large fresh strawberries
  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 sheets graham crackers, crushed
  • 2 tablespoons heavy cream
  • 1/2 teaspoon lemon zest

Instructions

  1. Wash the strawberries and pat them dry with a paper towel.
  2. Slice the stem off each strawberry and slightly slice the tip so they can stand upright.
  3. Use a paring knife to hollow out the center of each strawberry.
  4. In a medium bowl, beat the softened cream cheese, powdered sugar, vanilla, and lemon zest until smooth.
  5. Add heavy cream and beat until the mixture is light and fluffy.
  6. Transfer the mixture to a piping bag fitted with a star tip.
  7. Pipe the cheesecake filling into each strawberry cavity.
  8. Sprinkle the crushed graham cracker crumbs over the top of the filling.
  9. Refrigerate until ready to serve.

Notes

  • Make sure cream cheese is at room temperature for a lump-free filling.
  • Wait to add graham cracker crumbs until serving to keep them crunchy.
  • Use firm berries so they hold their shape during hulling.
