Cheeseburger Soup is a hearty, creamy, and comforting dish that combines the flavors of a classic cheeseburger with the coziness of a soup. Packed with ground beef, potatoes, vegetables, and melty cheddar, it’s the perfect family dinner on a chilly night.

Ingredients

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 3 medium potatoes, peeled and diced
  • 3 cups chicken broth
  • 2 cups whole milk
  • 2 cups cheddar cheese, shredded
  • 4 tbsp butter
  • 1/4 cup all-purpose flour
  • Salt and pepper, to taste
  • 2 tbsp parsley, chopped (for garnish)

Instructions

  1. Place a large soup pot over medium heat and brown the ground beef. Remove and set aside.
  2. In the same pot, melt butter and sauté onions, carrots, celery, and garlic until softened.
  3. Sprinkle flour over the vegetables, stirring to form a roux.
  4. Slowly pour in chicken broth while stirring until smooth. Add potatoes.
  5. Simmer until potatoes are tender, about 15–20 minutes.
  6. Return the beef to the pot, then stir in milk.
  7. Reduce heat to low and gradually add shredded cheddar until melted and creamy.
  8. Season with salt and pepper to taste.
  9. Ladle into bowls, garnish with parsley, and serve hot.
