Ingredients

  • Ground Beef: 1 pound (90/10 lean)
  • Elbow Macaroni: 2 cups uncooked
  • Onion: 1 medium, diced
  • Garlic: 2 cloves, minced
  • Ketchup: 1/3 cup
  • Yellow Mustard: 2 tablespoons
  • Diced Tomatoes: 1 can (14.5 oz), drained
  • Cheddar Cheese: 2 cups shredded
  • Salt: 1 teaspoon
  • Black Pepper: 1/2 teaspoon
  • Olive Oil: 1 tablespoon

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13 baking dish.
  2. Cook pasta to al dente, drain, and set aside.
  3. In a skillet, heat olive oil and sauté onion and garlic until soft.
  4. Add ground beef, breaking it apart until fully browned. Stir in salt, pepper, diced tomatoes, ketchup, and mustard.
  5. Transfer the beef mixture to a large bowl and combine with the cooked pasta and half the shredded cheese.
  6. Pour the mixture into your prepared baking dish and spread it evenly. Top with the remaining cheese.
  7. Bake uncovered for 20–25 minutes, until the cheese is bubbling and golden.
  8. Let it sit for 5 minutes before serving. Garnish as desired.

Notes

  • Cook pasta slightly under to prevent mushiness.
  • Use lean beef to avoid excess grease.
  • Drain diced tomatoes well for best texture.
  • Add pickles or green onions on top for extra flavor.
