Cake Batter Rice Krispie Treats

Extra gooey and festive Rice Krispie treats infused with the flavor of yellow cake mix and topped with a white chocolate glaze and rainbow sprinkles.
- 1/2 cup Unsalted Butter
- 10 oz Mini Marshmallows
- 1/3 cup Dry Yellow Cake Mix
- 1 tsp Vanilla Extract
- 6 cups Crispy Rice Cereal
- 1 cup White Chocolate Chips
- 2 tbsp Heavy Cream
- 3 tbsp Rainbow Sprinkles
- Grease a 9×9 inch square baking pan or line it with parchment paper.
- In a large non-stick pot, melt the butter over low heat.
- Add the mini marshmallows to the pot and stir constantly until they are completely melted and smooth.
- Stir in the dry cake mix and vanilla extract until well combined with the marshmallow mixture.
- Remove the pot from the heat and gently fold in the crispy rice cereal until evenly coated.
- Transfer the mixture to the prepared pan and press down very lightly to even out the top.
- For the glaze, melt white chocolate chips and heavy cream in the microwave in 20-second bursts, stirring until smooth.
- Spread the glaze over the treats and immediately top with rainbow sprinkles.
- Let the treats set for 30 minutes before cutting into squares.
Notes
- Melt marshmallows on the lowest heat possible to ensure the treats stay soft.
- Do not pack the cereal mixture too tightly into the pan.
- If the glaze is too thick, add a tiny splash more of heavy cream.
