Cake Batter Rice Krispie Treats

Extra gooey and festive Rice Krispie treats infused with the flavor of yellow cake mix and topped with a white chocolate glaze and rainbow sprinkles.

Ingredients

  • 1/2 cup Unsalted Butter
  • 10 oz Mini Marshmallows
  • 1/3 cup Dry Yellow Cake Mix
  • 1 tsp Vanilla Extract
  • 6 cups Crispy Rice Cereal
  • 1 cup White Chocolate Chips
  • 2 tbsp Heavy Cream
  • 3 tbsp Rainbow Sprinkles

Instructions

  1. Grease a 9×9 inch square baking pan or line it with parchment paper.
  2. In a large non-stick pot, melt the butter over low heat.
  3. Add the mini marshmallows to the pot and stir constantly until they are completely melted and smooth.
  4. Stir in the dry cake mix and vanilla extract until well combined with the marshmallow mixture.
  5. Remove the pot from the heat and gently fold in the crispy rice cereal until evenly coated.
  6. Transfer the mixture to the prepared pan and press down very lightly to even out the top.
  7. For the glaze, melt white chocolate chips and heavy cream in the microwave in 20-second bursts, stirring until smooth.
  8. Spread the glaze over the treats and immediately top with rainbow sprinkles.
  9. Let the treats set for 30 minutes before cutting into squares.

Notes

  • Melt marshmallows on the lowest heat possible to ensure the treats stay soft.
  • Do not pack the cereal mixture too tightly into the pan.
  • If the glaze is too thick, add a tiny splash more of heavy cream.
