  • 12 oz linguine pasta
  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 2 tablespoons butter (divided)
  • 3 cloves garlic, minced
  • 1 1/2 cups heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook linguine pasta according to package instructions in salted water. Drain and set aside.
  2. In a bowl, toss the chicken pieces with Cajun seasoning until well coated.
  3. Heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat. Add chicken and sear for 4–6 minutes, or until cooked through and browned. Remove and set aside.
  4. In the same skillet, reduce heat to medium and add remaining 1 tablespoon butter and minced garlic. Sauté for 1 minute until fragrant.
  5. Pour in heavy cream, bring to a gentle simmer, then stir in Parmesan and mozzarella. Whisk until the cheese is melted and sauce is smooth. Season with salt and black pepper to taste.
  6. Add the drained linguine to the sauce and toss until fully coated.
  7. Top with Cajun chicken bites and garnish with fresh parsley. Serve hot.
