Butter Pecan Cookies

These Butter Pecan Cookies are rich, buttery, and packed with toasted pecans for the perfect chewy-crisp treat that melts in your mouth.

Ingredients

  • Unsalted Butter: 1 cup (softened)
  • Brown Sugar: 1 cup (packed)
  • Granulated Sugar: 1/4 cup
  • Egg: 1 large
  • Vanilla Extract: 2 teaspoons
  • All-Purpose Flour: 2 cups
  • Cornstarch: 2 teaspoons
  • Baking Soda: 1/2 teaspoon
  • Salt: 1/2 teaspoon
  • Pecans: 1 1/2 cups (toasted and chopped)

Instructions

  1. Preheat Your Equipment: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Combine Ingredients: In a mixing bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy. Beat in the egg and vanilla extract until fully incorporated.
  3. Prepare Your Cooking Vessel: In another bowl, whisk together flour, cornstarch, baking soda, and salt. Gradually mix dry ingredients into the wet ingredients. Fold in toasted chopped pecans.
  4. Assemble the Dish: Using a cookie scoop or tablespoon, form dough balls and place them on prepared baking sheets about 2 inches apart.
  5. Cook to Perfection: Bake for 10–12 minutes or until edges are lightly golden. Centers should still look slightly soft.
  6. Finishing Touches: Remove from oven and sprinkle lightly with flaky sea salt if desired. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
  7. Serve and Enjoy: Serve warm for maximum melt-in-your-mouth magic, or let cool and store for chewy perfection the next day.

Notes

  • Toast pecans beforehand for best flavor.
  • Chill dough before baking to prevent spreading.
  • Sprinkle with flaky sea salt for extra flavor contrast.
  • Store in airtight container for up to 1 week.
