Ingredients

Scale
  • 2 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 ¾ cups granulated sugar
  • 4 large eggs
  • 1 cup whole milk
  • 2 teaspoons vanilla extract
  • 3 medium fresh peaches, thinly sliced

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream the butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each, then stir in vanilla.
  4. Gradually add the dry ingredients, alternating with the milk, and mix until just combined.
  5. Pour the batter evenly into the prepared pan and smooth the top.
  6. Arrange the peach slices on top, gently pressing them into the batter.
  7. Bake for 45 to 55 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the cake cool in the pan for at least 20 minutes before slicing.

Notes

  • Use ripe but firm peaches for best texture and flavor.
  • Let the cake cool before slicing to avoid crumbling.
  • Add a pinch of cinnamon or cardamom to enhance flavor.
  • Serve with ice cream or whipped cream for a decadent treat.
