A decadent combination of a soft fudgy chocolate cookie base, a creamy peanut butter center, and a rich chocolate ganache topping.

  • 1/2 cup (115g) Unsalted Butter, softened
  • 1/2 cup (100g) White Granulated Sugar
  • 1/2 cup (100g) Brown Sugar
  • 1 Large Egg
  • 1 teaspoon Vanilla Extract
  • 1 1/4 cups (155g) All-Purpose Flour
  • 1/2 cup (45g) Unsweetened Cocoa Powder
  • 1/2 teaspoon Baking Soda
  • 1 cup (250g) Creamy Peanut Butter
  • 1 1/2 cups (180g) Powdered Sugar
  • 1 cup (170g) Semi-Sweet Chocolate Chips

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream together the butter, granulated sugar, and brown sugar until fluffy.
  3. Beat in the egg and vanilla extract.
  4. Whisk together the flour, cocoa powder, and baking soda; gradually add to the wet ingredients.
  5. Scoop dough into balls and place on baking sheets, flattening slightly.
  6. Bake for 8-10 minutes until edges are set; let cool completely on the pan.
  7. Mix peanut butter and powdered sugar until smooth; place a dollop on each cooled cookie.
  8. Melt chocolate chips and spoon a small amount over the peanut butter layer.
  9. Let the chocolate set before serving.

Notes

  • Ensure cookies are completely cool before adding the peanut butter layer.
  • Use standard creamy peanut butter for the best stability.
  • Chill the peanut butter mixture if it is too soft to handle.
