These chewy, fudgy brownie cookies combine the best of brownies and cookies in one bite — with crisp crackly tops and rich chocolate centers that melt in your mouth.

Ingredients

Scale
  • 3/4 cup unsweetened cocoa powder
  • 1 cup semi-sweet chocolate chips, melted
  • 1/4 cup butter, melted
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together cocoa powder, granulated sugar, brown sugar, and melted butter until smooth. Stir in the melted chocolate.
  3. Add eggs and vanilla extract. Mix until thick and shiny.
  4. In a separate bowl, mix flour, baking powder, and salt. Fold the dry ingredients into the wet ingredients until just combined.
  5. Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 9–11 minutes until tops are shiny and cracked. Centers should be soft.
  7. Cool on the sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • Chill dough for 30 minutes if you prefer thicker cookies.
  • A sprinkle of sea salt on top adds a nice contrast.
  • Store in an airtight container for up to 5 days or freeze for longer storage.
