  • 4 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 2 cups warm vegetable broth
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 teaspoon apple cider vinegar or lemon juice (optional)

Instructions

  1. Place a light-colored saucepan over medium heat.
  2. Add butter and cook until melted. Continue cooking, swirling, until butter turns golden brown and smells nutty (3–4 minutes).
  3. Whisk in flour and stir constantly for 1–2 minutes until golden and smooth.
  4. Slowly add warm broth while whisking to prevent lumps.
  5. Simmer for 5–7 minutes, whisking, until thickened.
  6. Stir in salt, pepper, and optional vinegar or lemon juice. Taste and adjust seasoning.
  7. Serve warm over your favorite dishes.
