These crispy, cheesy broccoli fritters are a delicious way to sneak in veggies — golden on the outside, tender inside, and perfect for dipping or stacking.

Ingredients

  • 2 cups finely chopped broccoli (steamed or blanched)
  • 2 large eggs
  • 1/3 cup all-purpose flour
  • 1/2 cup shredded cheddar or mozzarella cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Olive oil, for frying

Instructions

  1. Steam or blanch broccoli until tender, then chop finely.
  2. In a bowl, combine chopped broccoli, eggs, flour, cheese, garlic powder, salt, and pepper.
  3. Heat a nonstick skillet over medium heat with a little olive oil.
  4. Scoop 2 tablespoons of mixture per fritter into the skillet and flatten slightly.
  5. Cook 3–4 minutes per side, until golden and crisp. Repeat in batches.
  6. Drain on a paper towel-lined plate and serve warm with sour cream or dipping sauce.

Notes

  • Make sure broccoli is dry before mixing to prevent soggy fritters.
  • Add chopped herbs like parsley or dill for extra freshness.
  • For gluten-free, use almond or oat flour.
  • Leftovers reheat well in a skillet or air fryer.
