Broccoli Cheddar Soup

A creamy, cheesy, and comforting soup made with tender broccoli, sharp cheddar, and a velvety broth. Perfect for cozy dinners or serving in a bread bowl.

  • 4 tablespoons unsalted butter
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1/4 cup (30 g) all-purpose flour
  • 3 cups (720 ml) chicken or vegetable broth
  • 2 cups (480 ml) whole milk
  • 1 cup (240 ml) heavy cream
  • 4 cups (350 g) broccoli florets, chopped
  • 1 cup (100 g) shredded carrots
  • 2 cups (200 g) sharp cheddar cheese, freshly grated
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg (optional)

Instructions

  1. In a large pot, melt butter over medium heat. Add onion and garlic, sauté until softened.
  2. Stir in flour to form a roux, cooking for 1–2 minutes.
  3. Slowly whisk in broth, then add milk and cream. Stir until smooth.
  4. Add broccoli and carrots, simmer for 15–20 minutes until tender.
  5. Reduce heat and stir in cheddar cheese. Season with salt, pepper, and nutmeg.
  6. For a creamier soup, blend part of it with an immersion blender, leaving some chunks.
  7. Ladle into bowls and serve hot with crusty bread or in a bread bowl.

Notes

  • Grate cheese fresh for smoother melting.
  • Use sharp cheddar for the best flavor.
  • Don’t overcook broccoli to keep some texture.
  • Reheat gently on low heat to prevent separation.
