Ingredients

  • Boneless skinless chicken thighs or breasts, 2 pounds
  • Olive oil, 2 tablespoons
  • Onion, 1 medium finely chopped
  • Garlic cloves, 4 minced
  • Ground cumin, 2 teaspoons
  • Chili powder, 2 teaspoons
  • Smoked paprika, 1 teaspoon
  • Salt, 1 1/2 teaspoons
  • Black pepper, 1/2 teaspoon
  • Chicken broth, 3/4 cup
  • Corn or flour tortillas, 12 small
  • Fresh cilantro, 1/2 cup chopped
  • Crumbled white cheese, 1/2 cup
  • Green sauce, 1/2 cup

Instructions

  1. Heat a large skillet over medium heat or prepare a crockpot.
  2. Season the chicken with salt, black pepper, cumin, chili powder, and smoked paprika.
  3. Add olive oil to the skillet or crockpot.
  4. Add the chopped onion and garlic, then place the chicken on top.
  5. Pour in the chicken broth and cook until the chicken is tender and fully cooked.
  6. Shred the chicken and stir it into the cooking juices.
  7. Spoon the chicken into warm tortillas and top with cilantro, cheese, and green sauce.
