Fluffy, soft pancakes made with ripe bananas and sour cream, topped with sliced bananas and maple syrup for a delicious breakfast treat.

Ingredients

  • 2 ripe bananas, mashed
  • 1/2 cup sour cream
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 tablespoons sugar
  • 3/4 cup milk
  • 2 tablespoons butter, melted
  • 1 teaspoon vanilla extract

Instructions

  1. In a mixing bowl, whisk together the mashed bananas, sour cream, eggs, milk, melted butter, and vanilla extract.
  2. In another bowl, combine the flour, sugar, and baking powder.
  3. Pour the dry ingredients into the wet ingredients and stir until just combined (do not overmix).
  4. Heat a nonstick skillet over medium-low heat and lightly grease with butter.
  5. Pour the batter onto the skillet, making small round pancakes. Cook until bubbles form on the surface, then flip and cook until golden on both sides.
  6. Serve warm, topped with sliced bananas and maple syrup.

Notes

  • Do not overmix the batter for fluffy pancakes.
  • Make sure to cook pancakes on medium-low heat to avoid burning.
  • Leftover pancakes can be stored in the fridge and reheated.
