- 2 medium ripe bananas, mashed
- 1 cup all-purpose flour
- 3/4 cup milk
- 1 large egg
- 2 tsp baking powder
- 2 tbsp sugar
- 1 tsp vanilla extract
- 1/4 tsp salt
- 2 tbsp butter, melted
- Heat a nonstick skillet or griddle over medium heat.
- In a bowl, mash bananas and whisk in egg, milk, butter, sugar, and vanilla.
- In another bowl, mix flour, baking powder, and salt.
- Combine wet and dry ingredients, stirring gently until just mixed.
- Grease skillet lightly and pour 1/4 cup batter for each pancake.
- Cook until bubbles form on the surface, flip, and cook until golden.
- Serve warm with banana slices, butter, and syrup.
Notes
- Use very ripe bananas for the sweetest flavor.
- Don’t overmix the batter; a few lumps are fine.
- Keep pancakes warm in a 200°F oven until ready to serve.
