Ingredients

Scale
  • 4 tilapia fillets (about 1.5 lbs)
  • 1 cup cherry tomatoes, halved
  • 1 lemon, thinly sliced
  • 3 garlic cloves, minced
  • 2 tablespoons capers
  • 3 tablespoons olive oil
  • 1 tablespoon dried Italian herbs
  • 2 tablespoons fresh parsley, chopped
  • 1/4 cup crumbled feta cheese

Instructions

  1. Preheat oven to 400°F (200°C) and lightly oil a large baking dish.
  2. In a small bowl, mix olive oil, minced garlic, and Italian herbs.
  3. Pat tilapia dry with paper towels and season with salt and pepper.
  4. Place fillets in the baking dish and surround with cherry tomatoes, lemon slices, and capers.
  5. Drizzle olive oil mixture evenly over the fish. Top with crumbled feta.
  6. Bake for 15–18 minutes, or until fish flakes easily with a fork.
  7. Garnish with fresh parsley and serve immediately.

Notes

  • Use fresh tilapia for best flavor and texture.
  • Do not overbake the fish—it cooks quickly and can dry out.
  • Feta is best added right before baking to maintain texture.
  • Rest the dish for a few minutes before serving to absorb flavor.
