This baked halibut is light, flaky, and topped with a zesty lemon-garlic breadcrumb crust. Ready in under 30 minutes, it’s perfect for a quick, healthy dinner with vibrant flavors and satisfying texture.

  • 4 halibut fillets (about 6 ounces each)
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 lemon, zested and juiced
  • 2 tablespoons fresh parsley, chopped
  • 1/2 cup panko breadcrumbs
  • 1 tablespoon capers
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 400°F (200°C) and lightly oil a baking dish.
  2. In a small bowl, mix panko, olive oil, garlic, lemon zest, parsley, capers, salt, and pepper.
  3. Place halibut fillets in the baking dish and drizzle with lemon juice and olive oil.
  4. Top each fillet with the breadcrumb mixture, pressing it down lightly.
  5. Bake for 12 to 15 minutes, until fish is opaque and flakes easily.
  6. Optional: Broil for 1 minute to crisp the topping.
  7. Serve hot with lemon wedges or your favorite sides.
