A warm and comforting pasta dish that combines creamy baked feta and sweet roasted cherry tomatoes, perfect for a quick and delicious meal.

Ingredients

  • Pasta: 200g of your favorite pasta
  • Feta Cheese: 200g block of feta
  • Cherry Tomatoes: 250g
  • Olive Oil: 2 tablespoons
  • Garlic: 2 cloves, minced
  • Fresh Basil: A handful, chopped

Instructions

  1. Preheat Your Equipment: Preheat your oven to 400°F (200°C).
  2. Combine Ingredients: Place the feta cheese in the center of your baking dish. Surround it with cherry tomatoes, drizzle with olive oil, and sprinkle minced garlic over the top.
  3. Prepare Your Cooking Vessel: Cook the pasta according to the package instructions, until al dente. Drain and set aside.
  4. Assemble the Dish: Once the feta and tomatoes have roasted for 30 minutes, remove from the oven. Mash the feta and burst the tomatoes, then add the cooked pasta and toss everything together.
  5. Cook to Perfection: Return the dish to the oven for an additional 5 minutes.
  6. Finishing Touches: Sprinkle fresh basil on top of the pasta.
  7. Serve and Enjoy: Serve hot, garnished with extra basil if desired.

Notes

  • Don’t skip the roasting time, as it brings out the full flavor of the tomatoes and feta.
  • For extra richness, top with grated parmesan cheese before serving.
  • If you want to add heat, sprinkle in some red pepper flakes while roasting the tomatoes.
