Ingredients

  • Cod Fillets: 4, 6-ounce fillets
  • Cherry Tomatoes: 1 cup
  • Lemon: 1 medium, sliced
  • Olive Oil: 3 tablespoons
  • Fresh Parsley: 2 tablespoons, chopped
  • Fresh Thyme: 1 teaspoon, leaves only
  • Salt: ½ teaspoon
  • Black Pepper: ¼ teaspoon, freshly cracked
  • Red Pepper Flakes: ¼ teaspoon, optional

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Arrange cod fillets in a baking dish and surround with cherry tomatoes and lemon slices.
  3. Drizzle olive oil over fillets and season with salt, black pepper, and optional red pepper flakes.
  4. Sprinkle fresh parsley and thyme over the fillets and tomatoes.
  5. Bake for 12–15 minutes until cod is opaque and flakes easily with a fork.
