Fudgy, rich Baileys Irish Cream Brownies topped with a smooth Baileys frosting and chocolate ganache. A decadent treat perfect for any occasion.

Ingredients

Scale
  • 1/2 cup unsalted butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar (packed)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup Baileys Irish Cream (plus more for frosting)
  • 3/4 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1/2 cup semi-sweet chocolate chips
  • 1 1/2 cups powdered sugar (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 baking pan with parchment paper, leaving some overhang.
  2. In a large bowl, melt the butter. Stir in granulated sugar and brown sugar until smooth.
  3. Beat in the eggs one at a time, then mix in vanilla extract and Baileys Irish Cream.
  4. In a separate bowl, whisk together flour, cocoa powder, and salt.
  5. Gradually fold the dry mixture into the wet ingredients. Stir in chocolate chips.
  6. Pour the batter into the prepared baking pan and smooth the top.
  7. Bake for 25–30 minutes or until a toothpick comes out with moist crumbs. Let cool completely.
  8. For the frosting, beat softened butter, gradually add powdered sugar and Baileys, and mix until creamy.
  9. Spread frosting over the cooled brownies. Drizzle with melted chocolate if desired.
  10. Chill before slicing for neat squares. Serve and enjoy.

Notes

  • Chill brownies before slicing for clean cuts.
  • Use high-quality cocoa and chocolate for best flavor.
  • Let brownies cool completely before frosting to avoid melting.
