A refreshing and protein-packed salsa featuring succulent shrimp, buttery avocado, and bright citrus flavors.

Ingredients

  • 1 pound Cooked Shrimp, peeled and chopped
  • 2 large ripe Avocados, diced
  • 3 medium Roma Tomatoes, seeded and diced
  • 1/4 cup Red Onion, finely minced
  • 1/2 cup fresh Cilantro, chopped
  • 1 small Jalapeño, seeded and minced
  • 3 tablespoons fresh Lime Juice
  • 1 tablespoon Extra Virgin Olive Oil
  • 1/2 teaspoon Salt

Instructions

  1. In a large mixing bowl, combine the chopped cooked shrimp, diced tomatoes, minced red onion, jalapeño, and cilantro.
  2. Dice the avocados into even cubes and add them to the bowl.
  3. Immediately pour the fresh lime juice and olive oil over the avocado to prevent browning.
  4. Add the salt and very gently fold all ingredients together with a large spoon.
  5. Let the salsa sit for about 10 minutes in the refrigerator to allow the flavors to meld.
  6. Give it one final gentle stir and taste for seasoning.
  7. Serve chilled with tortilla chips or as a topping for fish.

Notes

  • Ensure the shrimp is completely chilled before starting.
  • Use Roma tomatoes because they have less water content.
  • Keep the avocado cubes large enough so they don’t turn into mash.
