A refreshing, creamy and crisp avocado salad made with fresh cucumbers, red onion, lemon juice and herbs — perfect for a quick side or light lunch.

Ingredients

  • 2 ripe avocados, diced
  • 2 medium cucumbers, thinly sliced
  • 1 small red onion, thinly sliced
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pinch of red pepper flakes (optional)

Instructions

  1. In a large bowl, combine the sliced cucumbers, diced avocado, red onion, and chopped cilantro.
  2. Drizzle with lemon juice and olive oil.
  3. Season with salt, black pepper, and red pepper flakes if using.
  4. Gently toss everything together until evenly coated.
  5. Serve immediately or chill for 10 minutes before serving.
