This Apple Pie Cheesecake combines the cozy flavors of spiced apple pie with the rich creaminess of classic cheesecake. It’s the ultimate dessert fusion, perfect for holidays or any sweet craving.

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 3 (8-ounce) blocks cream cheese, softened
  • 1 cup granulated sugar
  • 1/2 cup sour cream
  • 2 teaspoons vanilla extract
  • 3 large eggs
  • 3 medium Granny Smith apples, peeled and diced
  • 1/3 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice

Instructions

  1. Preheat oven to 325°F (160°C). Wrap a springform pan with foil and prepare a water bath.
  2. Mix graham cracker crumbs and melted butter. Press into the bottom of the pan to form crust.
  3. In a large bowl, beat cream cheese until smooth. Add sugar, sour cream, and vanilla. Mix until well combined. Add eggs one at a time, mixing gently after each.
  4. Pour the cheesecake batter into the crust. Place the pan in a larger dish and pour hot water halfway up the sides.
  5. Bake for 55–65 minutes, until the center is set but still slightly jiggly. Cool at room temperature, then refrigerate overnight.
  6. In a saucepan, cook diced apples, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch over medium heat until thickened and tender. Let cool.
  7. Top the chilled cheesecake with the apple mixture before serving.
