Amish Snow Day Soup is a hearty and comforting soup made with a flavorful blend of ground beef, vegetables, potatoes, and seasonings, perfect for warming up on a cold winter’s day.

  • 1 lb ground beef
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups potatoes, peeled and diced
  • 2 cups mixed vegetables (frozen or fresh)
  • 1 (14.5 oz) can diced tomatoes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • 1 bay leaf

Instructions

  1. In a large pot or Dutch oven, brown ground beef over medium heat until no longer pink. Drain excess fat.
  2. Add diced onion and garlic to the pot. Sauté for 2–3 minutes until softened and fragrant.
  3. Stir in beef broth, potatoes, mixed vegetables, diced tomatoes, salt, pepper, thyme, paprika, and bay leaf.
  4. Bring to a boil, then reduce heat to low. Cover and simmer for 30–35 minutes, or until potatoes and vegetables are tender.
  5. Remove bay leaf, adjust seasoning to taste, and serve hot.

Notes

  • For extra richness, add 1/2 cup heavy cream or a pat of butter before serving.
  • This soup freezes well; store in airtight containers for up to 3 months.
  • Can substitute ground turkey or chicken for a lighter option.
