A no-fuss oven-baked classic, Amazing Forgotten Chicken features juicy chicken breasts, creamy soups, and tender rice all cooked together in one dish. It’s comfort food at its easiest.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup uncooked long grain white rice
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 packet (1 oz) onion soup mix
  • 1 ½ cups water
  • 2 tablespoons chopped parsley

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix cream of chicken soup, cream of mushroom soup, water, and onion soup mix until smooth.
  3. Grease a 9×13-inch baking dish.
  4. Spread uncooked rice evenly on the bottom of the dish.
  5. Pour soup mixture over the rice and mix slightly to distribute.
  6. Place chicken breasts on top, pressing slightly into the mixture.
  7. Cover tightly with aluminum foil.
  8. Bake for 1 hour and 30 minutes, or until rice is tender and chicken is cooked through.
  9. Remove from oven, garnish with chopped parsley, and let rest for 5-10 minutes before serving.

Notes

  • Do not use instant rice—it will overcook.
  • Let the dish rest before serving to absorb remaining sauce.
  • Add a pinch of paprika or cayenne if you like a little kick.
