Golden and crispy on the outside, soft and fluffy on the inside, these Almond Flour Keto Waffles are a low-carb, gluten-free breakfast that feels just as indulgent as the original.

Ingredients

  • 1 1/2 cups almond flour
  • 3 large eggs
  • 1/4 cup melted butter
  • 1/4 cup unsweetened almond milk
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/8 teaspoon salt
  • 1 tablespoon erythritol or monk fruit (optional)

Instructions

  1. Preheat your waffle iron and grease it well.
  2. In a bowl, whisk together eggs, melted butter, almond milk, and vanilla.
  3. In another bowl, combine almond flour, baking powder, cinnamon, sweetener, and salt.
  4. Mix the wet and dry ingredients until smooth. Let the batter rest for 5 minutes.
  5. Pour about 1/3 cup of batter into the waffle iron and cook until golden and crisp, about 3–4 minutes.
  6. Remove gently and repeat with remaining batter.
  7. Serve warm with butter, sugar-free syrup, or your favorite toppings.

Notes

  • Use finely ground almond flour for best texture.
  • Don’t overfill the waffle iron to avoid overflow.
  • Freeze leftovers between parchment layers for easy reheating.
