Crispy, sweet-savory chicken nuggets coated in golden grated sweet potato and air-fried to perfection. A healthier twist on a classic favorite, perfect for snacks, dinners, or parties.

  • 1 pound boneless chicken breast, cut into nugget-sized pieces
  • 1 large sweet potato, peeled and finely grated
  • 1/2 cup all-purpose flour
  • 1 large egg, beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Cooking spray, as needed

Instructions

  1. Preheat air fryer to 375°F.
  2. In a bowl, mix flour, garlic powder, paprika, salt, and pepper. In another bowl, beat the egg. In a third bowl, place grated sweet potato.
  3. Spray air fryer basket lightly with cooking spray.
  4. Dredge chicken pieces in flour mixture, dip in egg, then press into grated sweet potato to coat well.
  5. Place coated nuggets in air fryer basket in a single layer. Spray tops with cooking spray.
  6. Air fry for 10 minutes. Flip, spray again, and cook for another 8–10 minutes until golden and cooked through.
  7. Cool slightly on a wire rack before serving.

Notes

  • Use a fine grater for crispier coating.
  • Chill coated nuggets before air frying for better crust adherence.
  • Serve with your favorite dipping sauce like honey mustard or spicy mayo.
