A fluffy, cheesy, and veggie-packed air fryer frittata that comes together in under 25 minutes. Perfect for breakfast, brunch, or even a quick dinner.

  • 6 large eggs
  • 1/4 cup milk
  • 3/4 cup shredded mozzarella
  • 1 cup baby spinach, roughly chopped
  • 1/2 cup red bell pepper, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Olive oil spray, for greasing

Instructions

  1. Preheat your air fryer to 350°F (175°C) for about 3 minutes.
  2. In a bowl, whisk together the eggs, milk, salt, and pepper.
  3. Fold in the spinach, bell pepper, and cherry tomatoes.
  4. Spray a silicone baking mold with olive oil spray and pour in the egg mixture.
  5. Sprinkle shredded mozzarella on top.
  6. Place the mold in the air fryer basket.
  7. Cook at 350°F (175°C) for 15 to 18 minutes or until fully set and golden.
  8. Let it rest for 3 to 5 minutes before slicing.
  9. Serve warm and enjoy!

Notes

  • Use freshly shredded cheese for the best melt.
  • Letting it rest helps the frittata firm up for easier slicing.
  • You can substitute spinach with kale or broccoli if desired.
