Crispy, golden, and beautifully layered, accordion potatoes are the ultimate crowd-pleasing snack or side dish. They’re easy to make, fun to eat, and full of garlicky, herby flavor in every crunchy bite.

  • 4 medium Russet Potatoes
  • 4 tablespoons Unsalted Butter, melted
  • 2 tablespoons Olive Oil
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 2 tablespoons Fresh Parsley, chopped

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a small bowl, combine melted butter, olive oil, garlic powder, paprika, salt, and pepper.
  3. Peel the potatoes and slice them lengthwise with 1/4-inch accordion cuts, using skewers as guides. Soak in cold water for 15–30 minutes, then pat dry.
  4. Brush the potatoes generously with the butter mixture on all sides and place them on the prepared baking sheet.
  5. Bake for 40–50 minutes, flipping halfway through and brushing again if needed, until crispy and golden.
  6. Sprinkle with fresh parsley and serve warm.

Notes

  • Soaking the potatoes removes starch and helps them crisp up better.
  • Use a sharp knife and skewers for perfect accordion slices.
  • Reheat leftovers in the oven or air fryer for best texture.
